2 Tbsp. olive oil
6 garlic cloves, minced
1 medium onion, diced
1 Tbsp. tomato paste
3/4 c. chicken stock
1 large eggplant, diced
1 medium green bell pepper, diced
1 medium zucchini, quartered then sliced
5 mushrooms, sliced
1 can diced tomatoes (or 2 cans Rotel), drained
5 sprigs of Italian parsley
4 sprigs of basil
salt and pepper to taste

Heat the olive oil in a large pot over medium heat. Add the minced garlic and saute for about one minute. Add the diced onion and saute until they turn translucent, about 4 minutes. Add the tomato paste, stirring to mix evenly with garlic and onions. Cook for about a minute then add the chicken stock. Bring to a simmer, then add the eggplant, bell pepper, zucchini, and mushrooms. Cook for about 12 minutes, stirring occasionally. When the eggplant is mushy and the other vegetables are tender, add the tomatoes. Heat through, reduce heat to low, then add the parsley, basil, salt, and pepper. Serve.

Ethiopian Honey Bread

Ethiopian Honey Bread
2 Tbsp water
1 whole egg
3 Tbsp honey
3 Tbsp agave nectar
1/2 cup milk -- plus 2 Tbsp
3 1/2 Tbsp butter
3 1/4 cups white whole wheat bread flour
1 tsp salt
1/2 tsp ground cloves
1/2 tsp ground cinnamon
2 tsp ground coriander
2 tsp yeast

Place all ingredients in your machine fully assembled pan in the order specified by your machine's manufacturer. Select the sweet cycle, light crust, small size and press start.

Makes 1 1/2 lb loaf (12 servings). Per serving: 210 calories, 5 g fat, 6 g protein, 37 g carbs, 26 mg cholesterol, 223 mg sodium

Buttermilk Biscuits

In 1 1/2 quart mixing bowl beat together 2/3 cup real buttermilk and 1/3 cup real mayonnaise and 2 1/2 cups Bisquick, adding Bisquick little at a time with electric mixer medium speed and work in last cupful with spoon to soft dough. Dip hands in bit of Bisquick & shape dough into 8 patties each 1 " thick, placing close together in Pam-sprayed 9-10" Pyrex baking dish. Wipe tops each in bit of melted butter & bake 400°F 25 min or till golden brown. Immediately wipe tops in bit of butter again.

Makes 8. Note: these freeze well.

Ginger Dressing

In blender combine: 8 oz bottle Paul Newman's vinegar/oil dressing, 4 Tbsp ketchup, 2 Tbsp honey, 1 Tbsp ground ginger, 1 Tbsp soy sauce, 6 Tbsp peanut oil (14 oz). Refrigerate covered to use in 30 days.

Cheese Biscuits

Beat together with mixer on medium speed just till moistened 1 cup milk, 2 tsp sugar (or sugar substitute), 1/3 cup mayonnaise, 2 cups self-rising flour. Work in 3-4 Tbsp more self-rising flour just till dough is thick enough to drop from spoon and hold its shape. To this work in now 4-oz shredded sharp Cheddar. Drop by spoonfuls into 10 bumpy little mounds 1" apart on greased baking sheet. Spray tops each in a bit of Pam. Bake at 350&F; 25-30 minutes till golden-brown and at once spray again in bit of Pam and dust at once in garlic salt. Serve promptly. Freeze 3 months. Makes 10.

Reese's Peanut Butter Bars

2 sticks margarine, melted
2 cups graham cracker crumbs
1/2 cup peanut butter
2 1/2 cups powdered sugar

Stir until well-mixed. Pat into bottom of pan.

2 cups chocolate chips

Melt in microwave. Spread on peanut butter mixture. Let harden.

Full Meal Clam Chowder

Prep time: 20 minutes

4 slices bacon, cut up before cooking
1 green onion, sliced thin
8 oz can cream-style corn
1 can cream of mushroom soup
1 soup can milk
1 raw potato, cut into 1/2 inch cubes
6 oz can minced clams and juice

In saucepan, on medium heat, cook bacon till almost crisp. Add onion. Cook 1 more minute. Carefully drain grease into an old can. (Discard grease later when solidified.)

In same pan, add rest of ingredients on medium heat. Bring to a boil. Reduce heat to low. Cover. Cook, stirring often, til potatoes are done (approximately 15 minutes).

Makes 2-3 servings.

Basic Roll Dough

1 pkg yeast
1/4 cup lukewarm water
1 cup scalded milk
1/4 cup sugar
1/4 cup butter
1 tsp salt
3 1/2 cups flour
1 egg

Soften yeast in warm water -- it floats to the top. Mix with sugar, butter and salt -- let cool. Add 1 cup flour -- beat well. Add yeast and egg. Mix gradually. Add rest of flour -- mix; cover and let rise in warm place (1 1/2 hours). Punch down -- turn on flour board and shape.

Basic Salsa

3-4 Roma tomatoes, blanched in boiling water for approximately 30 seconds
1 bunch green onions, thinly sliced
1 clove elephant garlic, sliced & browned
1-2 jalapenos or serranos
1-3 squeezes lime juice
chopped fresh cilantro
salt to taste

Oatmeal Scotchies

1 1/4 cups all-purpose flour
1 tsp baking soda
1/2 tsp ground cinnamon
1/2 tsp salt
1 cup (2 sticks) butter or margarine, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
2 large eggs
1 tsp vanilla extract or grated peel of 1 orange
3 cups quick or old-fashioned oats
1 2/3 cups (11 oz pkg) butterscotch morsels

Preheat oven to 375° F.

Combine flour, baking soda, cinnamon and salt in small bowl. Beat butter, granulated sugar, brown sugar, eggs and vanilla extract in large mixer bowl. Gradually beat in flour mixture. Stir in oats and morsels. Drop by rounded tablespoon onto ungreased baking sheets.

Bake for 7-8 minutes for chewy cookies, 9-10 minutes for crisp cookies. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

Makes about 4 dozen cookies.

Snow Balls

2 sticks butter softened
6 Tbsp powdered sugar
1 tsp vanilla
2 cups flour
1 1/2 cups chopped pecans
Powdered sugar for rolling

Cream butter. Add sugar and vanilla, blending well. Mix in flour. Add nuts, blending well. Shape into very small balls. Place on cookie sheet.

Bake at 350°F for 20 minutes. Roll in powdered sugar while still warm.

Banana-Nut Muffins

Prep Time: 10 minutes
Total Time: 25 minutes

2 cups all-purpose flour
1/4 cup sugar
1 Tbsp baking powder
1/2 tsp salt
1 cup milk
1 egg, beaten
1/3 cup vegetable oil
3/4 cup mashed banana
1/2 cup chopped walnuts

Preheat oven to 400° F. Grease a 12-cup muffin pan. Sift flour, sugar, baking powder and salt into a medium bowl; make a well in center.

Mix milk, egg, oil, banana and walnuts in a small bowl. Pour mixture into well.

Mix batter just until moistened; do not overmix.

Spoon batter info prepared muffin cups. Bake until a toothpick inserted in center comes out clean or until muffins are gulden brown, about 15 minutes.

Makes 12 muffins

Asparagus Stir-Fry

1 lb asparagus
1 Tbsp water
1`tsp corn starch
1 Tbsp soy sauce
4 green onions, sliced
1 Tbsp vegetable oil
2 cups mushrooms, sliced
2 tomatoes, cut in chunks
2 cups rice, cooked

Snap off base and slice asparagus into 2" lengths.

In a small bowl, blend water and cornstarch. Stir in soy sauce and set aside.

Stir-fry asparagus and green onions in oil for about 4 minutes. Add mushrooms and cook another minutes. Stir and push vegetables to the sides; add cornstarch sauce. Simmer for a minute. Stir in tomatoes; heat through.

Serve with cooked rice.

Makes 4 servings.

Pasta with Artichoke and Tomatoes

1 pkg (9 oz) refrigerated, flavored pasta
1 can (14 1/2 oz) artichoke hearts, drained
1 can (14 1/2 oz) stewed tomatoes, Italian style
2-4 cloves garlic, minced or 1-2 tsp ready-to-use garlic
Grated Parmesan cheese

Heat water for pasta

Cut artichokes into quarters.

In skillet combine artichokes, tomatoes, and garlic. Cook over medium heat; heat through.

Cook pasta in the pot of water according to package directions. Drain pasta.

Serve topped with artichoke sauce. Sprinkle with cheese.

Serves 4.

All-Season Grilled Chicken

Prep Time: 15 minutes
Total Time: 45 minutes

1 1/2 cups chili sauce
3/4 cup red-wine vinegar
1 1/2 Tbsp prepared horseradish
2 small cloves garlic, halved
1 tsp salt
4 bone-in chicken breasts (4 oz each)

Mix chili sauce, vinegar, horseradish, garlic, and salt in a bowl. Reserve 1/2 of the marinade. Add chicken to bowl; turn to coat. Cover; marinate in refrigerator for about 5 minutes.

Preheat grill or broiler. Remove chicken from marinade; discard marinade in bowl. Place chicken on grill or on broiler pan.

Grill or broil chicken, turning and basting frequently with half the reserved marinade, until juices run clear when meat is pierced with a knife, about 30 minutes.

Heat remaining reserved marinade in a small saucepan, stirring occasionally. Serve hot alongside chicken.

Serves 4

Pepper Sirloin Steak

Prep Time: 10 minutes
Total Time: 25 minutes

1 (2 1/2 lb) sirloin steak, 1 1/2 in. thick
1/2 cup better or margarine
1/4 cup chopped fresh parsley or 4 tsp dried parsley
1/4 cup minced onion
2 Tbsp Worcestershire sauce
1 tsp freshly ground pepper
1/2 tsp dry mustard

Lightly score edges of steak at 1-inch intervals. Preheat grill or broiler.

Combine butter, parsley, onion, Worcestershire sauce, pepper and mustard in a small saucepan. Heat, stirring continually, over low heat, until butter melts. Reserve 1/4 of the mixture.

Place steak on grill or broiler pan. Brush steak with butter mixture. Cook, basting frequently with butter mixture, about 6 minutes per side for medium.

Place steak on a serving platter. Cut thin sliced across the grain. Drizzle reserved butter mixture over steak.

Serves 6

Pecan Sandies

Pecan Sandies
1 cup butter
1/3 cup granulated sugar
2 tsp vanilla
2 cups all purpose flour
1 cup chopped pecans
1/4 cup powdered sugar

Beat butter for 30 seconds; add granulated sugar and beat until fluffy. Add vanilla and 2 teaspoons water; beat well. Stir in flour and pecans. Shape into 1 inch balls or 1 1/2 X 1 1/2 inch fingers. Place on ungreased cookie sheet. Bake in a 325 degree oven for about 20 minutes. Cool completely. Gently shake a few at a time in a bag with powdered sugar.

Makes 36.

Hawaiian Bread (Bread Machine)

2 eggs
1/2 cup pineapple juice
1/2 cup water
3/8 cup sugar
1/4 tsp ginger
1/2 tsp vanilla extract
1/2 stick butter, softened
3 1/3 cups bread flour
1/2 tsp salt
2 1/4 tsp active dry yeast

Put in eggs, pineapple juice, water, sugar, ginger, vanilla extract and butter. Add flour and salt, then yeast. Use basic bread setting and light color.

Massage Oil

1/2 cup almond oil
1/2 tsp ground cinnamon
1/ tsp vanilla extract

Mix and let sit overnight. Line a funnel with a coffee filter and pour into bottle or other container.

To use, pour oil into palm and massage into skin.
