Black Bean Dip

* 2 Tablespoons lime juice
* 2 Tablespoons olive oil
* Salt
* 1/2 small clove garlic, chopped
* 1 15.5-oz. can black beans, drained and rinsed
* 1/2 teaspoon chili powder
* 1/4 teaspoon ground cumin

Combine black beans, 2 Tbsp. olive oil, 2 Tbsp. lime juice, chili powder, cumin and salt in food processor and process until smooth. Scrape into a bowl.

Serve with tomatoes, carrots, pita wedges and celery, if desired, for dipping.

Florida Cole Slaw

* 1 package cole slaw mix (or about 4 cups cabbage and about 1 cup shredded carrots)
* 1 chopped onion (about 3/4 - 1 cup)

Mix these and set aside.

In a microwavable dish or cup mix:

* 1 cup vinegar
* 1 cup sugar or substitute
* 1 1/2 tsp salt
* 3/4 tsp pepper

Bring to a boil. Pour over cabbage mixture.

Add 1 cup oil (canola, vegetable, olive)

Put in a covered container and let sit in refrigerator a couple of hours before serving.
Will keep for months in the refrigerator.
