Slow Cooker Curry
In a slow-cooker, combine:
2 tsp minced garlic
1 (1-inch) piece fresh ginger, grated
2 Tbsp red wine vinegar
1 1/2 tsp curry powder
1 Tbsp water
1 tsp cumin
2 tsp salt
1/2 tsp pepper
Add:
1 1/2 lb boneless skinless chicken thighs
onion, bell pepper, carrots, celery (optional)
Toss to coat. Cook for 7 hours on low.
Add:
2 cups cooked long-grain white rice
3 diced plum tomatoes
cilantro
