Beef Ragout on Polenta*

Prep Time: 20 minutes
Total Time: 10 hours, 20 minutes

1 medium onion, chopped
1 green bell pepper, chopped
2 medium carrots, chopped
1 lb. beef stew meat, cut into 1 1/2-inch cubes
1/2 tsp coarsely ground black pepper
1 (14-oz) jar tomato pasta sauce
1 (24-oz) pkg polenta, cut into 10 slices

In 4 to 6-quart slow cooker, layer all ingredients except polenta in order listed.

Cover; cook on low setting for 8-10 hours.

About 10 minutes before serving, heat polenta as directed on package. Arrange 2 warm polenta slices on each individual serving plate. Top each with about 1 cup beef mixture.

Makes 5 servings. Per serving: 290 calories, 7 g fat
