Italian Chicken*

1/2 medium onion, chopped
1/2 green bell pepper, chopped
2 Tbsp capers, drained
2 Tbsp olive oil
1 anchovy, finely chopped, or 1 Tbsp anchovy paste
1 Tbsp minced garlic
3 Tbsp tomato paste
1 14.5-oz can diced tomatoes, drained
1 small can sliced black olives, drained
1 7-oz can sliced mushrooms, drained
1/4 tsp crushed red pepper (or to taste)
1 tsp black pepper
1/2 tsp kosher salt
1/2 tsp oregano
2 Tbsp red wine
2 lbs skinless, boneless chicken thighs, fat trimmed
shaved Parmesan cheese, optional

Add all ingredients, except the chicken, to the slow cooker; mix well. Add the chicken and stir to coat it with the other ingredients.

Cover and cook on low for 8 hours.

To serve, transfer chicken thighs to individual plates using tongs. Stir the sauce and spoon a little onto each serving. Garnish with Parmesan shavings if desired.
