Artichoke Salad

1 can (13.75 oz) quartered artichoke hearts, drained and coarsely chopped
2 oz sliced pepperoni, sliced into 1/4-inch strips
1/4 cup chopped sweet red onion (optional)
2 Tbsp chopped fresh basil
1/2 cup crumbled Gorgonzola (or other blue cheese)
3 Tbsp extra-virgin olive oil
1/2 tsp minced garlic
1 1/2 Tbsp balsamic vinegar

Mix everything together and stir well. Serve on a bed of lettuce if desired.
