Corn and Black Bean Salad*

3/4 teaspoon ground cumin
1/4 cup lime juice
2 tablespoons vegetable oil
1 tablespoon jalapeņo, seeded and chopped
1/2 teaspoon salt
1 can (15-oz.) black beans, drained and rinsed
1 can (11-oz.) whole kernel corn, drained
1/2 cup diced seeded green bell pepper
1/2 cup diced seeded red bell pepper
1/2 cup diced peeled onion
1/4 cup chopped fresh cilantro

In a small skillet over low heat, brown cumin until fragrant, about 1 minute; remove from heat. Add lime juice, oil, jalapeno and salt; whisk to blend. Set aside.

In a large bowl, combine black beans, corn, green pepper, red pepper, onion and cilantro. Add lime dressing to bean mixture and toss to coat evenly. Serve immediately or refrigerate.
