Lo Mein (Ham or Chicken)
1 tsp. vegetable oil
1/2 med. red bell pepper in 2" strips
1 pkg (3 oz) Oriental flavor Ramen noodles
2 scallions, sliced
4 oz. diced ham steak or diced cooked chicken
11/4 cup water
3 cups finely shredded green cabbage
Heat oil in 5 qt. pot. Add meat & pepper strips and cook about 5 minutes. Remove with slotted spoon.
Add water, seasoning pack and cabbage.
Break noodles in half and put on top of cabbage. Cover. Reduce heat to low and cook 6 minutes (until noodles are tender).
Add onions & meat mixture. Cook 2 more minutes.
