French Vinaigrette
2 Tbsp lemon juice
1/2 Tbsp minced shallot
1/4 tsp Dijon mustard
pinch of salt
freshly ground black pepper, to taste
3 Tbsp olive oil
Whisk together the lemon juice, shallot, mustard, salt and pepper. Slowly add the olive oil, whisking, until the dressing thickens.
Makes about 5 Tbsp
