Zucchini Bread

2 cups sugar
3 eggs
1 cup oil
1 Tbsp vanilla
2 1/2 cups flour
1 tsp salt
1/4 tsp baking powder
1 Tbsp cinnamon
1 tsp soda
2 - 2 1/2 cups shredded zucchini, peeled if you like
1 cup chopped pecans (optional)

Preheat oven to 350 degrees.

Combine sugar, egg, oil and vanilla. In a separate bowl, combine the dry ingredients; then add squash and nuts. Bake in greased loaf pans at 350 degrees for 50-60 minutes. Makes 2 loaves. Or, makes 18-20 muffins, baked for 20 minutes.

For chocolate zucchini bread, add 1/2 cup cocoa to dry ingredients, or pour half of batter into a pan and add 1/4 cup to the remaining batter. Another delicious option is to add 1 cup shredded coconut.
